Our doughs are fully home-made, using top quality Italian milled ‘00’ flour, yeast, sea salt and water. Slow-proved to create that perfect Neapolitan style crust - puffy, crisp, yet slightly chewy.
We also offer a low-gluten thin crust alternative (supplementary cost). We purchase Italian-made gluten-free bases, but due to our small preparation area and single oven, some wheat flour contamination is possible. If you'd like a low-gluten crust, please order in advance to ensure availability.
